Ingredients
1.5 lbs chicken thighs, cut into 1-inch pieces
1 lb Yukon Gold potatoes, cubed into 1-inch pieces
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 teaspoon onion powder
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Step 1: Preheat your air fryer to 400°F (200°C) for 5 minutes.
Step 2: In a large bowl, combine the cubed chicken and potatoes.
Step 3: Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, oregano, onion powder, salt, and pepper.
Step 4: Toss everything thoroughly until the chicken and potatoes are evenly coated in the spice mixture.
Step 5: Place the mixture into the air fryer basket in a single layer, working in batches if necessary.
Step 6: Air fry for 18-22 minutes, shaking the basket halfway through to ensure even browning.
Step 7: Check that the chicken has reached an internal temperature of 165°F and potatoes are fork-tender.
Step 8: Remove from the air fryer, garnish with fresh parsley, and serve immediately.
Notes
Ensure chicken and potatoes are cut to the same size for even cooking. For extra crispy potatoes, soak them in water for 15 minutes and pat dry before seasoning.
