Authentic Mexican Albondigas Soup

1 lb ground beef (80/20 or 90/10)
1/4 cup uncooked long-grain white rice
1 large egg, lightly beaten
3 tablespoons fresh mint (yerba buena), finely chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
8 cups beef or chicken broth
2 medium tomatoes, blended or finely chopped
1/2 medium onion, diced
2 cloves garlic, minced
2 medium carrots, sliced into rounds
2 medium potatoes, peeled and cubed
2 medium zucchini, sliced into half-moons
1 tablespoon olive oil
Fresh cilantro and lime wedges for garnish

Instructions

Step 1: In a large mixing bowl, combine the ground beef, uncooked rice, egg, chopped mint, salt, and pepper. Mix gently until combined and roll into 1-inch meatballs.
Step 2: Heat olive oil in a large stockpot over medium heat. Sauté the onion and garlic until translucent and fragrant, about 3-4 minutes.
Step 3: Pour in the blended tomatoes and cook for another 2 minutes. Add the broth and bring the mixture to a gentle boil.
Step 4: Carefully drop the meatballs into the boiling broth. Reduce heat to low-medium and simmer for 15 minutes.
Step 5: Add the sliced carrots and cubed potatoes to the pot. Continue to simmer for another 15 minutes or until the vegetables are nearly tender.
Step 6: Add the zucchini and simmer for a final 5-10 minutes until all vegetables and the rice inside the meatballs are fully cooked.
Step 7: Season with additional salt and pepper to taste. Serve hot in bowls garnished with fresh cilantro and a squeeze of lime.

Notes

Always use fresh mint for the most authentic flavor. If the soup gets too thick, add a splash more broth.
