Ingredients
1/2 cup Unsalted Butter
1 1/2 cups Heavy Whipping Cream
2 cups Freshly Grated Parmesan Cheese
1/4 tsp Salt (to taste)
1/4 tsp Black Pepper
1 pinch Ground Nutmeg (optional)
Instructions
Step 1: Melt the butter in a large skillet or saucepan over medium-low heat until completely liquid.
Step 2: Pour in the heavy whipping cream and whisk gently. Let the mixture reach a light simmer for about 3-5 minutes until slightly reduced.
Step 3: Reduce the heat to low. Gradually whisk in the freshly grated Parmesan cheese, adding one handful at a time until smooth.
Step 4: Season with salt, black pepper, and nutmeg. Continue to whisk until the sauce reaches your desired thickness.
Step 5: Remove from heat immediately and toss with your favorite cooked pasta or serve as a dipping sauce.
Notes
Always use fresh Parmesan from a block; pre-shredded cheese will make the sauce grainy.
