Ingredients
1/2 cup Unsalted Butter (high quality)
1 1/2 cups Heavy Whipping Cream
2 cups Freshly Grated Parmesan Cheese
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
1 pinch Ground Nutmeg
Instructions
Step 1: Melt the butter in a medium saucepan over medium-low heat. Be careful not to let the butter brown.
Step 2: Pour in the heavy whipping cream and let it simmer gently for 2-3 minutes until it starts to slightly thicken. Do not let it reach a full boil.
Step 3: Gradually add the freshly grated Parmesan cheese one handful at a time, whisking constantly until the cheese is completely melted and the sauce is smooth.
Step 4: Stir in the salt, black pepper, and ground nutmeg. Remove from heat immediately.
Step 5: Toss with your favorite cooked pasta, adding a tablespoon of pasta water if needed to reach your desired consistency.
Notes
Always use freshly grated cheese for the best melt. Pre-shredded cheese will make the sauce grainy.
