Ingredients
1/2 cup extra virgin olive oil
1/4 cup fresh lemon juice (approx. 2 lemons)
4 cloves garlic, minced or pressed
1/2 cup fresh Italian parsley, finely chopped
1 teaspoon dried oregano
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
Instructions
Step 1: In a medium glass bowl, combine the fresh lemon juice, minced garlic, dried oregano, sea salt, and black pepper.
Step 2: Whisk the mixture thoroughly and let it sit for about 5 minutes to allow the salt to dissolve and the garlic to infuse into the juice.
Step 3: While whisking constantly, slowly pour in the extra virgin olive oil in a steady stream to create a light emulsion.
Step 4: Fold in the finely chopped fresh parsley until evenly distributed throughout the amazing amogio sauce.
Step 5: Let the sauce rest at room temperature for 30 minutes before serving to allow the flavors to fully develop.
Step 6: Stir once more before drizzling over your favorite grilled protein.
Notes
Always use fresh lemon juice for the best flavor. If the olive oil solidifies in the fridge, let it sit at room temperature for 15 minutes before use.
