Stuffed Anaheim Peppers with Cheesy Chicken and Rice

A comforting and satisfying recipe featuring mild Anaheim peppers stuffed with a savory mixture of shredded chicken, fluffy rice, and melted Monterey Jack cheese, baked to golden perfection.

  • Total Time: 1 hour
  • Yield: 4 servings 1x

Ingredients

Scale

4 large Anaheim peppers
2 cups cooked, shredded chicken
1.5 cups cooked white rice
1.5 cups shredded Monterey Jack cheese, divided
1/4 cup diced yellow onion
1 (4 oz) can diced green chilies, drained
1 teaspoon garlic powder
1/2 teaspoon ground cumin
Salt and freshly ground black pepper to taste
Olive oil or cooking spray for baking dish

Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
Step 2: Wash the Anaheim peppers. Cut each pepper in half lengthwise and carefully scoop out the seeds and membranes.
Step 3: In a large mixing bowl, combine the cooked shredded chicken, cooked rice, 1 cup of shredded Monterey Jack cheese, diced onion, drained green chilies, garlic powder, ground cumin, salt, and black pepper. Mix thoroughly.
Step 4: Carefully spoon the chicken and rice mixture into each Anaheim pepper half, mounding it slightly. Arrange the filled peppers in the prepared baking dish.
Step 5: Sprinkle the remaining 1/2 cup of Monterey Jack cheese evenly over the tops of the stuffed peppers.
Step 6: Cover the baking dish loosely with aluminum foil. Bake for 25 minutes.
Step 7: Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown and the peppers are tender.
Step 8: Let the stuffed peppers rest for 5-10 minutes before serving.

Notes

For best results, ensure your chicken and rice are already cooked and cooled slightly before mixing the filling. This prevents overcooking and ensures a moist, flavorful stuffing. You can prepare the filling a day ahead and store it in an airtight container in the refrigerator.
