Ingredients
2 thick slices of sourdough bread
4 tablespoons high-quality unsalted cultured butter, softened
4–6 anchovy fillets in olive oil, finely minced
1/2 teaspoon lemon zest
1 tablespoon fresh parsley, chopped
Optional: red pepper flakes for garnish
1 tablespoon extra virgin olive oil (for toasting)
Instructions
Step 1: In a small mixing bowl, combine the softened butter, minced anchovies, and lemon zest. Use a fork to mash the ingredients together until they form a consistent, well-blended paste.
Step 2: Heat a large skillet over medium-high heat and add the olive oil.
Step 3: Place the sourdough slices in the skillet and toast for 2-3 minutes per side until deeply golden brown and crispy.
Step 4: Remove the bread from the pan and immediately spread a generous amount of the anchovy butter over each slice while the bread is still hot.
Step 5: Garnish with fresh parsley and red pepper flakes if desired. Serve immediately while the Anchovy Butter Toast is warm.
Notes
For a milder flavor, you can soak the anchovies in milk for 10 minutes before mincing to remove excess salt.
