1 1/4 cups all-purpose flour
1/2 cup almond flour

Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch round springform pan or line it with parchment paper.
Step 2: In a large bowl, cream together the softened butter and 3/4 cup sugar until the mixture is light and fluffy.
Step 3: Add the eggs one at a time, beating well after each addition, then stir in the vanilla and almond extracts.
Step 4: In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Step 6: Gently fold in about two-thirds of the sliced apples into the batter.
Step 7: Spread the batter evenly into the prepared pan. Arrange the remaining apple slices on top in a decorative pattern.
Step 8: Sprinkle the top with the remaining tablespoon of sugar and sliced almonds if using.
Step 9: Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
Step 10: Allow the cake to cool in the pan for 10 minutes before removing it to a wire rack to cool completely.

Ensure your eggs are at room temperature to prevent the batter from curdling. You can replace Granny Smith with Honeycrisp for a sweeter profile.
