Ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon dry mustard powder
1/4 teaspoon black pepper
1 cup sharp cheddar cheese, shredded
1 large Granny Smith apple, peeled and diced
1 cup whole milk
1/2 cup unsalted butter, melted
1 large egg
2 tablespoons fresh chives, chopped (optional)
Instructions
Step 1: Preheat your oven to 400°F (200°C) and grease a 12-cup muffin tin or line it with paper liners.
Step 2: In a large bowl, whisk together the flour, baking powder, salt, dry mustard, and black pepper until well combined.
Step 3: In a medium bowl, beat the egg and then whisk in the milk and melted butter until the mixture is smooth.
Step 4: Pour the wet ingredients into the dry ingredients and stir with a spatula until just moistened. Do not overmix.
Step 5: Gently fold in the shredded cheddar cheese, diced apples, and chives.
Step 6: Spoon the batter evenly into the prepared muffin cups, filling each about three-quarters full.
Step 7: Bake for 18-22 minutes, or until the tops are golden and a toothpick comes out clean. Let cool in the pan for 5 minutes before transferring to a wire rack.
Notes
For an extra crunch, sprinkle a little bit of extra cheese on top of the muffins before putting them in the oven.
