1 1/2 cups all-purpose flour

1/2 teaspoon salt
1 1/4 cups buttermilk
1 large egg
3 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 large Granny Smith apple, peeled and finely diced
Instructions
Step 1: In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until well combined.
Step 2: In a separate medium bowl, beat the egg, then stir in the buttermilk, melted butter, and vanilla extract.
Step 3: Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir gently until just combined; do not overmix.
Step 4: Fold in the finely diced apples carefully to distribute them throughout the batter.
Step 5: Heat a lightly oiled griddle or non-stick frying pan over medium heat.
Step 6: Pour approximately 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look dry.
Step 7: Flip the pancakes carefully and cook for another 1-2 minutes until the other side is golden brown and the center is cooked through.
Step 8: Serve warm with your choice of maple syrup, butter, or extra fresh apple slices.
Notes
For extra fluffiness, let the batter rest for 5 minutes before cooking.
