Ingredients
2 cups all-purpose flour
1.5 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground cloves
1/2 tsp salt
1 tsp baking soda
1/2 cup unsalted butter, softened
1/2 cup packed light brown sugar
1 large egg
1/2 cup unsulphured molasses
1 cup unfiltered apple cider
2 medium Granny Smith apples, peeled and diced
1 tsp vanilla extract
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch square baking pan or a similar sized baking dish.
Step 2: In a medium bowl, whisk together the flour, ground ginger, cinnamon, cloves, salt, and baking soda until well combined.
Step 3: In a large mixing bowl, cream the softened butter and brown sugar together using an electric mixer until the mixture is light and fluffy.
Step 4: Beat in the egg, followed by the molasses and vanilla extract. Ensure the mixture is smooth before proceeding.
Step 5: Gradually add the dry ingredients to the wet mixture, alternating with the apple cider. Start and end with the flour mixture, mixing on low speed until just combined.
Step 6: Gently fold in the diced apples using a spatula, ensuring they are evenly distributed throughout the batter.
Step 7: Pour the batter into the prepared baking pan and bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean. Serve warm.
