Instructions
Step 1: Simmer 2 cups of apple cider in a saucepan over medium-high heat until it reduces to 1/2 cup; allow to cool completely.
Step 2: Preheat your oven to 350°F (175°C) and grease a 10-cup Bundt pan thoroughly with flour-based baking spray.
Step 3: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Step 4: Cream the butter and sugars in a large bowl until light and fluffy, then beat in the eggs one by one.
Step 5: Mix in the sour cream, vanilla, and the cooled apple cider reduction until smooth.
Step 6: Gently fold the dry ingredients into the wet mixture until just combined, then pour into the Bundt pan.
Step 7: Bake for 50-60 minutes until a tester comes out clean; cool in the pan for 10 minutes before turning out.
Step 8: Whisk the powdered sugar, maple syrup, and milk together to create a glaze, then drizzle over the warm cake.
Notes
Ensure the cider reduction is completely cool before adding it to the batter to prevent the eggs from curdling.
