Ingredients
4 cups unfiltered apple cider, divided
3 envelopes (0.25 oz each) unflavored gelatin
2 tablespoons granulated sugar (optional, depending on cider sweetness)
1 cup heavy whipping cream, cold
2 tablespoons powdered sugar
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
Instructions
Step 1: Pour 1 cup of the cold apple cider into a medium bowl and sprinkle the gelatin evenly over the top. Let it stand for 5 minutes to bloom.
Step 2: In a small saucepan, heat the remaining 3 cups of cider (and granulated sugar, if using) over medium heat until it reaches a simmer, but do not let it boil.
Step 3: Pour the hot cider over the bloomed gelatin mixture and whisk constantly until the gelatin is completely dissolved and the liquid is clear.
Step 4: Pour the mixture into individual ramekins or a large serving dish. Refrigerate for at least 4 hours, or until completely set.
Step 5: Just before serving, beat the heavy cream, powdered sugar, cinnamon, and vanilla in a cold bowl until stiff peaks form. Dollop onto the set apple cider gelatin with cinnamon whipped cream and serve immediately.
Notes
For the best flavor, use fresh orchard cider rather than processed apple juice.
