Ingredients
1 lb brioche bread, cut into 1-inch cubes
4 large Granny Smith apples, peeled and sliced
6 large eggs
2 cups heavy cream
1 cup whole milk
1 cup granulated sugar
2 tsp ground cinnamon
1 tsp vanilla extract
1/2 tsp salt
4 tbsp unsalted butter
Instructions
Step 1: Preheat your oven to 350°F (175°C) and generously grease a 9×13 inch baking dish.
Step 2: In a large skillet, melt the butter over medium heat. Add the sliced apples and 2 tablespoons of sugar. Sauté for 5-7 minutes until the apples are tender.
Step 3: Place the bread cubes in a large mixing bowl and toss with the sautéed apples and any remaining butter from the skillet.
Step 4: In a separate bowl, whisk together the eggs, heavy cream, milk, remaining sugar, cinnamon, vanilla, and salt until well combined.
Step 5: Pour the custard mixture over the bread and apples. Gently press down on the bread to ensure it is submerged. Let soak for 30 minutes.
Step 6: Transfer the mixture to the prepared baking dish. Bake for 45-50 minutes, or until the top is golden brown and the custard is set. Let rest for 10 minutes before serving.
Notes
For a crunchier top, sprinkle a tablespoon of demerara sugar over the pudding before baking.
