Ingredients
2 1/2 cups all-purpose flour
1 cup unsalted butter, cold and cubed
1 tsp salt
1 tbsp granulated sugar
6–8 tbsp ice water
3 large Granny Smith apples, peeled and finely diced
1/4 cup brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tbsp lemon juice
1 egg (for egg wash)
Coarse sparkling sugar for topping
Instructions
Step 1: In a large bowl, whisk together flour, salt, and 1 tbsp sugar. Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs.
Step 2: Gradually add ice water, one tablespoon at a time, mixing until the dough begins to clump together. Form into two discs, wrap in plastic, and refrigerate for 1 hour.
Step 3: In a saucepan over medium heat, combine diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 5-7 minutes until apples soften slightly. Let cool completely.
Step 4: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Step 5: Roll out the dough on a floured surface to 1/8 inch thickness. Cut into 4×5 inch rectangles.
Step 6: Place 1-2 tablespoons of apple filling on one half of each rectangle. Fold the dough over and crimp the edges with a fork to seal.
Step 7: Cut small vents in the top of each pie. Brush with beaten egg and sprinkle with coarse sugar.
Step 8: Bake for 20-25 minutes or until the apple cinnamon hand pies are golden brown. Transfer to a wire rack to cool.
Notes
Always ensure the filling is completely cool before assembling the pies to prevent the dough from becoming soggy.
