2 cups old-fashioned rolled oats
1 cup whole wheat flour
1 tablespoon ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup maple syrup or honey
1/4 cup melted coconut oil
1 large egg, room temperature
1 teaspoon vanilla extract
2 cups Granny Smith apples, finely diced (about 2 medium apples)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper, leaving a slight overhang on the sides.
Step 2: In a large mixing bowl, stir together the rolled oats, flour, cinnamon, baking powder, and salt until well combined.
Step 3: In a separate medium bowl, whisk together the maple syrup, melted coconut oil, egg, and vanilla extract until smooth.
Step 4: Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples gently.
Step 5: Transfer the mixture to the prepared baking pan and press down firmly with a spatula to create an even layer.
Step 6: Bake for 30-35 minutes, or until the edges are golden brown and the center feels set to the touch.
Step 7: Allow the bars to cool completely in the pan before lifting them out using the parchment paper and slicing into 12 rectangles.
