Ingredients
2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/2 cups milk
1 large egg
3 tablespoons melted butter
1/4 cup pure maple syrup
1 teaspoon vanilla extract
1 1/2 cups peeled and finely diced apples (Honeycrisp or Granny Smith)
Instructions
Step 1: In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt until well combined.
Step 2: In a separate medium bowl, beat the egg and then stir in the milk, melted butter, pure maple syrup, and vanilla extract.
Step 3: Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined; be careful not to overmix, as a few lumps are fine.
Step 4: Gently fold the finely diced apples into the batter until evenly distributed.
Step 5: Heat a non-stick griddle or large skillet over medium heat and lightly grease with butter or oil.
Step 6: Pour about 1/4 cup of batter for each pancake onto the griddle. Cook until bubbles form on the surface and the edges appear dry, about 2-3 minutes.
Step 7: Flip carefully and cook the other side for another 1-2 minutes until golden brown and cooked through. Serve your apple maple pancakes warm with extra syrup.
Notes
For extra flavor, sauté the apple dices in a little butter and cinnamon before adding them to the batter.
