Instructions
Step 1: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease with non-stick spray.
Step 2: In a large bowl, whisk together 2 cups of flour, granulated sugar, baking powder, 1 tsp cinnamon, and salt.
Step 3: In a medium bowl, combine the melted butter, Greek yogurt, maple syrup, eggs, and vanilla extract until smooth.
Step 4: Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined. Fold in the diced apples carefully.
Step 5: Prepare the streusel by mixing 1/2 cup flour, brown sugar, and 1 tsp cinnamon. Cut in the cold butter using a fork or pastry cutter until crumbly.
Step 6: Divide the batter evenly among the muffin cups. Generously sprinkle the streusel topping over each muffin.
Step 7: Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean.
Step 8: Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
Notes
Ensure your butter for the streusel is very cold for the best texture. Use a variety of apples for a complex flavor profile.
