Ingredients
2 cups all-purpose flour
3/4 cup granulated sugar
2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp salt
1/2 cup unsalted butter, melted
2 large eggs
1/2 cup whole milk
1 tsp vanilla extract
2 cups Granny Smith apples, peeled and diced
1/4 cup brown sugar (for streusel)
1/4 cup flour (for streusel)
2 tbsp cold butter (for streusel)
Instructions
Step 1: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
Step 2: In a large bowl, whisk together the 2 cups of flour, granulated sugar, baking powder, cinnamon, and salt for the apple pie muffins recipe base.
Step 3: In a medium bowl, combine the melted butter, eggs, milk, and vanilla extract until smooth.
Step 4: Gently fold the wet ingredients into the dry ingredients until just combined; do not overmix.
Step 5: Fold in the diced apples carefully to distribute them evenly throughout the apple pie muffins recipe batter.
Step 6: Prepare the streusel by mixing the brown sugar, 1/4 cup flour, and cold butter until crumbly.
Step 7: Scoop the batter into the muffin tin and top each with a generous amount of streusel.
Step 8: Bake for 20-22 minutes or until a toothpick inserted into the center comes out clean.
Step 9: Allow the muffins to cool for 5 minutes in the pan before transferring to a wire rack.
Notes
For best results, use firm, tart apples like Granny Smith. Do not overmix the batter to keep the muffins tender.
