Ingredients
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups vegetable oil
2 cups granulated sugar
3 large eggs, room temperature
1 tablespoon vanilla extract
3 cups Granny Smith apples, peeled and diced
1 cup walnuts, toasted and chopped
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch tube or bundt pan thoroughly.
Step 2: In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg until well combined.
Step 3: In a large mixing bowl, beat the vegetable oil and sugar together. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Step 4: Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix the batter.
Step 5: Fold in the diced apples and toasted walnuts using a large spatula. The batter will be very thick.
Step 6: Spoon the batter into the prepared pan and bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
Step 7: Cool the cake in the pan for 15 minutes before inverting onto a wire rack to cool completely.
Notes
For the best results, toast your walnuts in a dry skillet over medium heat for 3-5 minutes until fragrant before adding to the batter.
