1 pound short pasta (penne, rotini, or spaghetti)
1 pound fresh asparagus, woody ends snapped off, cut into 1-inch pieces
3–4 cloves garlic, minced
1/4 cup olive oil, plus more for serving
Zest of 1/2 lemon
Juice of 1 lemon (about 2–3 tablespoons)
1/2 cup grated Parmesan cheese, plus more for serving
Salt and freshly ground black pepper to taste
1/2 cup reserved pasta water, plus more if needed

Instructions

Step 1: Bring a large pot of heavily salted water to a rolling boil. Add the pasta and cook according to package directions until al dente. Before draining, reserve about 1 cup of the starchy pasta water. Drain the pasta and set aside.
Step 2: While the pasta is cooking, heat the olive oil in a large skillet or non-stick pan over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
Step 3: Add the chopped asparagus to the skillet. Sauté for 3-5 minutes, stirring occasionally, until the asparagus is bright green and tender-crisp. You want it cooked through but still with a slight bite.
Step 4: Add the drained pasta to the skillet with the asparagus and garlic. Pour in about 1/2 cup of the reserved pasta water, the lemon juice, and the lemon zest. Toss everything together, allowing the pasta water to create a light, emulsified sauce. If the sauce looks too thick, add a little more pasta water, a tablespoon at a time, until you reach your desired consistency.
Step 5: Stir in half of the grated Parmesan cheese and season with salt and freshly ground black pepper to taste. Continue to toss until the cheese is melted and well combined.
Step 6: Divide the asparagus pasta among serving plates. Garnish with the remaining Parmesan cheese and an extra sprinkle of fresh black pepper, if desired. Serve immediately and enjoy this delightful asparagus pasta recipe!

Notes
