2 lbs fresh asparagus, trimmed
1 tbsp unsalted butter or olive oil
1 medium yellow onion, chopped
2 cloves garlic, minced
4 cups vegetable broth (or chicken broth)
1/2 cup heavy cream (or full-fat coconut milk for dairy-free)
Salt and freshly ground black pepper to taste

Instructions
Step 1: Prepare Your Asparagus. Wash the asparagus spears thoroughly. Snap off the tough, woody ends from each spear. You’ll hear and feel them naturally break at the tender point. Cut the remaining tender parts into 1-inch pieces, reserving about 1/2 cup of the tips for garnish, if desired.
Step 2: Sauté Aromatics. In a large pot or Dutch oven, melt the butter (or olive oil for dairy-free) over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant, being careful not to let it brown.
Step 3: Cook the Asparagus. Add the chopped asparagus (excluding the reserved tips) to the pot with the onions and garlic. Sauté for 3-5 minutes until the asparagus turns a vibrant green and is slightly tender-crisp. A pinch of salt and black pepper at this stage helps to bring out the vegetable’s natural sweetness.
Step 4: Simmer to Perfection. Pour in the vegetable broth and bring the mixture to a gentle simmer. Cook for about 8-10 minutes, or until the asparagus is very tender. Do not overcook, as this can dull the vibrant green color and flavor. While the soup simmers, quickly blanch your reserved asparagus tips in a small pot of boiling water for 1-2 minutes until bright green and tender-crisp. Immediately transfer them to an ice bath to stop the cooking and preserve their color.
Step 5: Blend Until Smooth. Carefully transfer the soup mixture to a blender (working in batches if necessary) or use an immersion blender directly in the pot. Blend until completely smooth and creamy. For an extra velvety texture, you can strain the soup through a fine-mesh sieve, though this is optional. Return the blended soup to the pot.
Step 6: Finish and Serve. Stir in the heavy cream (or plant-based cream/milk alternative). Heat gently over low heat, but do not boil. Season with additional salt and pepper to taste. If the soup is too thick, add a little more broth or water until it reaches your desired consistency. Ladle into bowls, garnish with the blanched asparagus tips, a swirl of cream, and perhaps some fresh chives or a sprinkle of Parmesan cheese. Notes
