Ingredients
3 to 4 very ripe bananas, mashed
1/3 cup melted butter
1/2 cup granulated sugar
1/4 cup packed brown sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1 1/2 cups all-purpose flour
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
Step 2: In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.
Step 3: Stir the melted butter into the mashed bananas until fully combined.
Step 4: Mix in the granulated sugar, brown sugar, beaten egg, and vanilla extract.
Step 5: Sprinkle the baking soda and salt over the mixture and stir to combine.
Step 6: Gently fold in the flour using a spatula. Do not overmix; stop as soon as no flour streaks remain.
Step 7: Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a tester comes out clean.
Step 8: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Always use bananas with lots of brown spots for the best flavor and moisture. Do not overmix the batter once the flour is added.
