2 lbs chicken wings (flats and drumettes separated)
1 tablespoon aluminum-free baking powder
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons olive oil
4 cloves garlic, minced
1/4 cup unsalted butter, melted
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
1 tablespoon fresh parsley, chopped
Instructions
Step 1: Preheat your oven to 425°F (220°C). Line a large baking sheet with aluminum foil and place a wire cooling rack on top. Spray the rack with non-stick cooking spray.
Step 2: Use paper towels to pat the chicken wings completely dry. In a large bowl, toss the wings with baking powder, salt, and pepper until evenly coated.
Step 3: Arrange the wings on the wire rack in a single layer, ensuring they are not touching. Bake for 30 minutes, then flip the wings and bake for another 15 minutes until golden brown and crispy.
Step 4: While the wings are finishing, whisk together the melted butter, minced garlic, lemon juice, and lemon zest in a small bowl.
Step 5: Remove the wings from the oven and transfer them to a clean bowl. Pour the lemon garlic butter over the wings and toss to coat thoroughly. Garnish with fresh parsley and serve immediately.
Notes
Ensure the wings are patted dry for maximum crispiness. Using a wire rack allows hot air to circulate under the wings.
