Ingredients
4 medium-sized firm pears (Bosc or Anjou recommended)
1 tablespoon olive oil
4 ounces (about 1 cup) good quality feta cheese, crumbled
2–4 tablespoons hot honey (store-bought or homemade)
Optional: Fresh thyme or rosemary sprigs for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2: Wash the pears, cut each in half lengthwise, and carefully scoop out the core. Lightly brush the cut sides with olive oil.
Step 3: Place the pear halves cut-side up on the prepared baking sheet. Bake for 20-25 minutes, or until fork-tender but still holding their shape.
Step 4: Remove the baked pears from the oven. Generously crumble the feta cheese into the hollowed centers and over the top of each pear half.
Step 5: Drizzle 2-4 tablespoons of hot honey over the feta-topped pears, adjusting the amount to your preferred level of spice and sweetness. Add a few fresh thyme or rosemary leaves if desired.
Step 6: Return the pears to the oven for another 5-7 minutes, or until the feta is slightly softened and warmed through, and the hot honey is bubbling gently. Serve warm immediately.
Notes
For an extra crunch, sprinkle some chopped walnuts or pecans over the pears before the final bake. If you don’t have hot honey, you can make your own by gently warming regular honey with red pepper flakes and then straining.
