2 cups all-purpose flour
3/4 cup granulated sugar
1 1/2 tsp baking powder
1/2 tsp salt
1/2 cup finely ground pistachios
3/4 cup buttermilk
2 large eggs
2 tbsp melted butter
1 tsp almond extract
1 cup fresh raspberries
1 cup powdered sugar (for glaze)
2 tbsp milk (for glaze)
1/4 cup chopped pistachios (for topping)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and generously grease two 6-cavity donut pans.
Step 2: In a large bowl, whisk together the flour, sugar, baking powder, salt, and ground pistachios until well combined.
Step 3: In a separate medium bowl, whisk the buttermilk, eggs, melted butter, and almond extract.
Step 4: Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Do not overmix.
Step 5: Carefully fold in the fresh raspberries, being mindful not to crush them too much.
Step 6: Transfer the batter to a piping bag or a large Ziploc bag with the corner snipped off. Pipe the batter into the prepared donut cavities, filling them about 3/4 full.
Step 7: Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
Step 8: Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Once cool, whisk the powdered sugar and milk to create a glaze, dip each donut, and sprinkle with chopped pistachios.
