4 red snapper fillets (6 oz each)
3 tablespoons extra virgin olive oil
2 cloves garlic, minced
1 teaspoon lemon zest
2 tablespoons fresh lemon juice
1 tablespoon fresh parsley, chopped
1/2 teaspoon dried oregano
Salt and black pepper to taste

Instructions
Step 1: Preheat your oven to 400°F (200°C) and lightly grease a large baking dish or line it with parchment paper.
Step 2: Pat the red snapper fillets dry with paper towels to ensure a zesty crust and place them in the prepared baking dish.
Step 3: In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, parsley, and oregano.
Step 4: Brush the herb mixture evenly over both sides of the fillets, then season with salt and pepper.
Step 5: Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
Step 6: Remove from the oven, garnish with fresh lemon slices, and serve immediately for an outstanding healthy dinner.
Notes
Ensure the fish is patted dry before adding the rub to prevent steaming. Use a meat thermometer to ensure an internal temp of 145°F.
