4 red snapper fillets (approx 6 oz each)
3 tablespoons extra virgin olive oil
3 cloves garlic, minced
1 large lemon, thinly sliced
1 teaspoon dried oregano
1/2 teaspoon sea salt
1/4 teaspoon cracked black pepper
Fresh parsley for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
Step 2: Pat the red snapper fillets dry with a paper towel to ensure they roast properly.
Step 3: In a small bowl, whisk together the olive oil, minced garlic, oregano, salt, and pepper.
Step 4: Place the fillets in the baking dish and brush the olive oil mixture evenly over each piece.
Step 5: Top each fillet with 2-3 lemon slices and bake for 12-15 minutes until the fish flakes easily.
Step 6: Remove from the oven, garnish with fresh parsley, and serve immediately while hot.
Notes
Always use fresh fish for the best results. If using frozen, ensure it is completely thawed and dried before seasoning.
