Ingredients
2 (6-ounce) salmon fillets
1 bunch thin to medium asparagus, ends trimmed
3 tablespoons unsalted butter, melted
3 cloves garlic, minced
1 teaspoon fresh lemon juice
1/2 teaspoon dried oregano
Salt and freshly ground black pepper to taste
Fresh lemon slices for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C) and prepare two large pieces of aluminum foil.
Step 2: Place equal portions of the trimmed asparagus in the center of each foil sheet and season with a pinch of salt.
Step 3: Place one salmon fillet on top of the asparagus on each sheet. Season the salmon with salt and pepper.
Step 4: In a small bowl, whisk together the melted butter, minced garlic, lemon juice, and dried oregano.
Step 5: Drizzle the garlic butter sauce evenly over the salmon and asparagus in both packets.
Step 6: Fold the sides of the foil over the salmon and asparagus, crimping the edges tightly to create a sealed pouch.
Step 7: Place the packets on a baking sheet and bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Step 8: Carefully open the foil (watch out for the hot steam!), garnish with fresh lemon slices, and serve immediately.
Notes
Ensure the asparagus ends are trimmed where they naturally snap to avoid woody texture.
