Ingredients
1.5 lbs pork tenderloin, cut into 1-inch cubes
1/2 cup balsamic vinegar
2 tablespoons honey
2 tablespoons olive oil
3 cloves garlic, smashed
1 tablespoon fresh rosemary, chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
Step 1: Pat the pork cubes dry with paper towels and season thoroughly with salt and pepper.
Step 2: In a small bowl, whisk together the balsamic vinegar and honey until well combined.
Step 3: Heat olive oil in a large oven-safe skillet over medium-high heat. Add the pork nuggets in a single layer.
Step 4: Sear the pork for 2-3 minutes per side until golden brown, then add the smashed garlic and rosemary to the skillet.
Step 5: Pour the balsamic mixture over the pork and transfer the skillet to a preheated oven at 400°F (200°C).
Step 6: Roast for 5-7 minutes until the glaze has thickened and the pork reaches an internal temperature of 145°F.
Step 7: Remove from the oven and let rest for 5 minutes, tossing the nuggets in the thickened glaze before serving.
Notes
Ensure the skillet is very hot before adding the pork to get a good sear.
