Banana Bread Syrup Cold Brew

A delightful homemade cold brew coffee infused with the warm, spiced, and sweet flavors of banana bread. Perfect for a cozy morning or an afternoon pick-me-up.

For the Banana Bread Syrup:
2 very ripe medium bananas, mashed
1/2 cup water
1/2 cup pure maple syrup (or light brown sugar, packed)
1 tsp vanilla extract
1/2 tsp ground cinnamon
Pinch of ground nutmeg
For the Cold Brew:
2–3 tbsp Banana Bread Syrup (or to taste)
1/2 to 3/4 cup cold brew concentrate
1/2 cup milk of choice (dairy or non-dairy)

Instructions

Step 1: To make the Banana Bread Syrup, combine the mashed ripe bananas, water, maple syrup (or brown sugar), ground cinnamon, and pinch of nutmeg in a small saucepan.
Step 2: Bring the mixture to a gentle simmer over medium heat. Reduce heat to low and cook for 15-20 minutes, stirring occasionally, until slightly thickened and fragrant.
Step 3: Remove from heat and stir in the vanilla extract.
Step 4: Place a fine-mesh sieve over a heatproof bowl or jar. Pour the banana mixture through the sieve, pressing down on the solids with the back of a spoon to extract as much liquid as possible.
Step 5: Discard the solids and allow the banana bread syrup to cool completely to room temperature. Transfer to an airtight container and refrigerate for up to 1-2 weeks.
Step 6: To assemble the Banana Bread Syrup Cold Brew, fill a glass with ice cubes.
Step 7: Pour in your desired amount of cold brew concentrate (1/2 to 3/4 cup is a good starting point).
Step 8: Add 2-3 tablespoons of the prepared Banana Bread Syrup to the cold brew. Stir well to combine.
Step 9: Top off with 1/2 cup of your favorite milk (dairy or non-dairy). Stir gently and enjoy immediately.

Notes

For an extra smooth syrup, briefly blend the strained liquid in a high-speed blender. The syrup can be stored in the refrigerator for up to two weeks, making it perfect for meal prepping your daily dose of deliciousness.
