Ingredients
3–4 very ripe bananas, mashed
1/3 cup melted butter
3/4 cup granulated sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1.5 cups all-purpose flour
1/2 cup chopped walnuts, toasted
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan with butter or cooking spray.
Step 2: In a large mixing bowl, mash the ripe bananas using a fork or masher until smooth.
Step 3: Stir the melted butter into the mashed bananas until well combined.
Step 4: Mix in the sugar, beaten egg, and vanilla extract.
Step 5: Sprinkle the baking soda and salt over the mixture and stir it in.
Step 6: Add the flour and gently fold it into the wet ingredients. Do not overmix.
Step 7: Fold in the toasted walnuts until just distributed.
Step 8: Pour the batter into the prepared loaf pan and bake for 50-60 minutes.
Step 9: Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For the best flavor, use bananas that are very soft and covered in black spots.
