Ingredients
1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch cubes
1/2 cup mayonnaise
1/4 cup Thai sweet chili sauce
1 tablespoon Sriracha (more or less to taste)
1 tablespoon honey
1 tablespoon lime juice
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
Fresh cilantro and sesame seeds for garnish
Instructions
Step 1: Soak bamboo skewers in water for 30 minutes to prevent burning during grilling.
Step 2: In a small bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice until smooth. Set aside half of the sauce for glazing and serving.
Step 3: Toss the chicken cubes with olive oil, minced garlic, salt, and pepper in a large bowl until evenly coated.
Step 4: Thread the chicken cubes onto the soaked skewers, leaving a small gap between pieces for even cooking.
Step 5: Preheat your grill or grill pan to medium-high heat and lightly oil the grates.
Step 6: Grill the bang bang chicken skewers for 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C).
Step 7: During the last 2 minutes of grilling, brush the skewers generously with the reserved bang bang sauce, allowing it to caramelize and become sticky.
Step 8: Remove from heat and garnish with chopped cilantro and sesame seeds before serving hot.
Notes
For a spicier version, increase the Sriracha or add a pinch of red pepper flakes to the sauce.
