Instructions

Step 1: If using frozen shrimp, thaw them under cold running water. Pat the shrimp *very dry* with paper towels. This is crucial for crispiness.
Step 2: In a medium bowl, toss the dried shrimp with the cornstarch until each shrimp is evenly coated.
Step 3: Prepare the Bang Bang sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, and sriracha until smooth. Taste and adjust sriracha for desired heat.
Step 4: For pan-frying: Heat 1-2 tablespoons of vegetable oil in a large skillet over medium-high heat until shimmering. For air frying: Preheat air fryer to 400°F (200°C). For baking: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Step 5: Cook the shrimp. Pan-frying: Add shrimp to the hot pan in a single layer, cooking in batches if necessary, for 2-3 minutes per side until golden brown and cooked through. Air frying: Arrange shrimp in a single layer in the air fryer basket; air fry for 8-10 minutes, shaking the basket halfway, until golden and crispy. Baking: Arrange shrimp on the prepared baking sheet; bake for 10-12 minutes, flipping halfway, until pink and crispy.
