Bariatric Jello Fluff

A light, airy, and protein-packed dessert perfectly tailored for bariatric patients and anyone seeking a guilt-free, sweet treat. This fluffy Bariatric Jello Fluff satisfies cravings without compromising dietary goals.

  • Total Time: 2 hours 10 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

1 package (0.3 oz) sugar-free Jello (any flavor, e.g., cherry, strawberry)
1 cup boiling water
1/2 cup cold water
1 cup ice cubes
1 cup low-fat or fat-free cottage cheese
1 scoop sugar-free vanilla protein powder (optional, for extra protein)
1 cup sugar-free whipped topping (like Cool Whip Lite)

Instructions

Step 1: In a medium-sized bowl, empty the contents of the sugar-free Jello packet. Carefully pour in 1 cup of boiling water and whisk thoroughly for at least 2 minutes, ensuring all the Jello powder is completely dissolved. This crucial step prevents any grainy texture.
Step 2: Add 1/2 cup of cold water to the dissolved Jello mixture and stir well. Then, immediately add the ice cubes and continue stirring gently until the ice is mostly melted and the mixture begins to thicken slightly, reaching a syrupy consistency. Remove any remaining ice cubes.
Step 3: Transfer the Jello mixture to the refrigerator and chill for about 15-20 minutes, or until it has the consistency of unset egg whites, slightly thickened but not fully firm.
Step 4: While the Jello is chilling, prepare your protein base. In a food processor or high-speed blender, combine the cottage cheese and sugar-free vanilla protein powder (if using). Blend until completely smooth and creamy, with no lumps remaining.
Step 5: Once the Jello mixture has reached the correct consistency, remove it from the refrigerator. Add the blended cottage cheese mixture to the Jello bowl. Using an electric mixer on medium-high speed, beat the Jello and cottage cheese together for 3-5 minutes until light, airy, and increased in volume.
Step 6: Gently fold in the sugar-free whipped topping using a spatula. Be careful not to overmix, as this can deflate the airy texture. Fold until just combined and no streaks of whipped topping remain.
Step 7: Spoon the Bariatric Jello Fluff into individual serving dishes, glasses, or a large bowl. Return it to the refrigerator and chill for at least 2 hours, or until completely set. For best results, chill overnight.
Step 8: Serve cold and enjoy your delicious Bariatric Jello Fluff! Garnish with a few fresh berries (if tolerated) or a tiny dollop of extra whipped topping, if desired.

Notes

For an even creamier texture, ensure your cottage cheese is blended until absolutely smooth. Experiment with different sugar-free Jello flavors to keep things exciting! Always consult with your bariatric dietitian before introducing new foods or ingredients into your diet.
