Ingredients
1 lb flank steak, thinly sliced against the grain
2 cups broccoli florets
1 red bell pepper, sliced
1 cup snap peas
2 large carrots, julienned
3 tablespoons soy sauce (low sodium)
1 tablespoon honey
1 tablespoon fresh ginger, minced
3 cloves garlic, minced
1 tablespoon sesame oil
1 tablespoon cornstarch
2 tablespoons vegetable oil for frying
Sesame seeds and sliced green onions for garnish
Instructions
Step 1: In a medium bowl, whisk together the soy sauce, honey, ginger, garlic, sesame oil, and cornstarch to create the sauce for your beef stir fry with vegetables.
Step 2: Add the sliced beef to the bowl and toss to coat; let it marinate for at least 10 minutes while you prep the vegetables.
Step 3: Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat until very hot.
Step 4: Add the beef in a single layer and sear for 2-3 minutes until browned. Remove the beef from the pan and set aside.
Step 5: Add the remaining tablespoon of oil to the same pan. Toss in the broccoli, carrots, bell peppers, and snap peas.
Step 6: Stir-fry the vegetables for 3-4 minutes, adding a splash of water if needed to help steam the broccoli.
Step 7: Return the beef and any remaining marinade/sauce to the pan with the vegetables.
Step 8: Toss everything together for 1-2 minutes until the sauce has thickened and coated the beef stir fry with vegetables. Serve immediately over rice.
Notes
Ensure the pan is very hot before adding the beef to get a good sear. Always slice beef against the grain for maximum tenderness.
