Ingredients
2.5 lbs beef chuck roast, cut into 1.5-inch cubes
1 large onion, diced
3 cloves garlic, minced
2 cups beef broth
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon black pepper
3 tablespoons cornstarch
3 tablespoons cold water
2 tablespoons olive oil
Instructions
Step 1: Season the beef cubes with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches until browned on all sides. Transfer the beef to the slow cooker.
Step 2: In the same skillet, add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute. Pour in a splash of the beef broth to deglaze the pan, scraping up any browned bits.
Step 3: Transfer the onion and garlic mixture to the crock pot. Add the remaining beef broth, Worcestershire sauce, soy sauce, thyme, and rosemary. Stir to combine.
Step 4: Cover and cook on LOW for 7-8 hours (recommended) or on HIGH for 4 hours until the beef is fork-tender.
Step 5: In a small bowl, whisk together cornstarch and cold water to create a slurry. Stir the slurry into the slow cooker.
