1 ¾ cups all-purpose flour

½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger

½ cup brown sugar (packed)
½ cup vegetable oil (or melted butter)
2 large eggs
1 cup canned pumpkin puree (not pumpkin pie filling)
1 teaspoon vanilla extract
½ cup chopped walnuts or pecans (optional)
½ cup raisins or chocolate chips (optional)
Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper for easy removal.
Step 2: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves. Set aside.
Step 3: In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until well combined. Add the eggs, pumpkin puree, and vanilla extract, and beat until smooth.
Step 4: Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
Step 5: If using, fold in the chopped nuts, raisins, or chocolate chips until evenly distributed.
Step 6: Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Step 7: Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, you can tent it with aluminum foil.
Step 8: Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
For best flavor, use good quality pumpkin puree and fresh spices. This bread tastes even better the next day!
