Ingredients
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup granulated sugar
1/2 cup vegetable oil (or canola oil)
2 large eggs
1 teaspoon vanilla extract
2 cups grated zucchini (about 2 medium zucchini, not squeezed)
Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line it with parchment paper, leaving an overhang on the longer sides.
Step 2: In a large bowl, whisk together the granulated sugar, vegetable oil, eggs, and vanilla extract until well combined and smooth.
Step 3: In a separate medium bowl, combine the all-purpose flour, baking soda, ground cinnamon, salt, and ground nutmeg. Whisk thoroughly to ensure all ingredients are evenly distributed.
Step 4: Gradually add the dry ingredients to the wet ingredients, mixing with a wooden spoon or spatula until just combined. Be careful not to overmix; a few lumps are fine.
Step 5: Gently fold in the grated zucchini until just incorporated. If adding optional ingredients like nuts or chocolate chips, fold them in now.
Step 6: Pour the batter into your prepared loaf pan and spread it evenly.
Step 7: Bake for 50-60 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean. The top should be golden brown.
Step 8: Remove the loaf pan from the oven and let the bread cool in the pan for 10-15 minutes on a wire rack.
Step 9: Carefully lift the bread out of the pan using the parchment paper overhang (or invert) and let it cool completely on the wire rack before slicing and serving.
Notes
For best results, do not squeeze the water out of the grated zucchini. This moisture is essential for the bread’s incredible tenderness. You can add 1/2 cup chopped walnuts, pecans, or 1/2 to 1 cup chocolate chips to the batter with the zucchini for variations. Ensure the bread cools completely before slicing for the cleanest cuts and best texture.
