Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1/2 cup buttermilk
1 tsp vanilla extract
1/2 tsp almond extract
1 1/2 tsp baking powder
1/2 tsp salt
2 cups mixed blackberries and blueberries
1 tbsp flour (for coating berries)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan thoroughly.
Step 2: In a large bowl, cream together the softened butter and sugar until light and fluffy.
Step 3: Add the eggs one at a time, beating well after each addition, then stir in the vanilla and almond extracts.
Step 4: In a separate bowl, whisk together the 2 cups of flour, baking powder, and salt.
Step 5: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, starting and ending with the flour.
Step 6: Toss the berries in 1 tablespoon of flour and gently fold them into the batter.
Step 7: Pour the batter into the prepared pan and bake for 45-50 minutes, or until a toothpick comes out clean.
Notes
Using fresh berries yields a better texture, but frozen berries work if thawed and drained well.
