4 cups fresh or frozen blackberries
1 1/4 cups granulated sugar, divided
1 tablespoon lemon juice
1 cup all-purpose flour
1 teaspoon baking powder

1/2 cup unsalted butter, melted
1/4 cup boiling water
1 teaspoon vanilla extract
Instructions
Step 1: Preheat your oven to 375°F (190°C) and grease a 9×9 inch baking dish.
Step 2: In a medium bowl, toss the blackberries with 1/4 cup of sugar and the lemon juice, then spread them evenly in the prepared dish.
Step 3: In another bowl, whisk together the flour, the remaining 1 cup of sugar, baking powder, and salt.
Step 4: Stir in the melted butter, boiling water, and vanilla extract until a thick batter forms.
Step 5: Drop spoonfuls of the batter over the blackberries, leaving small gaps for the steam to escape.
Step 6: Bake for 40-45 minutes, or until the topping is golden brown and the berry juices are bubbling around the edges.
Step 7: Allow the cobbler to cool for at least 15 minutes before serving to allow the juices to thicken.
Notes
