Ingredients
2 cups all-purpose flour
2 cups granulated sugar
3/4 cup Dutch-processed dark cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 cup buttermilk, room temperature
1/2 cup vegetable oil
2 large eggs, room temperature
2 tsp vanilla extract
1 cup hot brewed coffee
1 recipe chocolate pudding frosting
Extra cake crumbs for coating
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease and flour three 8-inch round cake pans.
Step 2: In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
Step 3: Add the buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients and beat on medium speed for about 2 minutes.
Step 4: Stir in the hot coffee by hand; the batter will be thin, but this is normal for the black magic blackout cake recipe.
Step 5: Pour the batter evenly into the prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean.
Step 6: Allow cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
Step 7: Crumble one cake layer into fine crumbs. Frost the remaining two layers with chocolate pudding frosting, then press the crumbs all over the exterior of the cake.
Notes
Ensure your coffee is hot to properly bloom the cocoa powder for the best flavor.
