5 cups fresh or frozen blackberries
1/2 cup granulated sugar (or more, to taste, depending on berry sweetness)

1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup old-fashioned rolled oats
1/2 cup packed light brown sugar
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into small cubes

Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish or similar oven-safe dish.
Step 2: In a large bowl, combine the fresh or frozen blackberries, 1/2 cup granulated sugar, 2 tablespoons all-purpose flour, lemon juice, and vanilla extract. Toss gently until the berries are evenly coated.
Step 3: Pour the blackberry mixture into the prepared baking dish, spreading it out into an even layer.
Step 4: In a separate medium bowl, prepare the crumble topping. Whisk together 1 cup all-purpose flour, rolled oats, brown sugar, 1/4 cup granulated sugar, ground cinnamon, and salt.
Step 5: Add the cold, cubed unsalted butter to the dry ingredients. Using your fingertips or a pastry blender, cut the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces remaining.
Step 6: Evenly sprinkle the crumble topping over the blackberry filling in the baking dish.
Step 7: Place the baking dish on a baking sheet and bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbly and thick. If the topping browns too quickly, loosely tent with aluminum foil.
Step 8: Remove from the oven and let cool for at least 15-20 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

For best results, use fresh, ripe blackberries. If using frozen, there’s no need to thaw them first; simply add them straight to the bowl. You might need to add a couple of extra minutes to the baking time. Leftovers can be stored in the refrigerator for up to 3-4 days in an airtight container.
