Classic Homemade Blackcurrant Jam

A traditional, high-pectin blackcurrant jam that perfectly captures the tart and sweet essence of summer berries.

Ingredients

Scale

1kg Fresh Blackcurrants, stemmed and washed
1.2kg Granulated Sugar
500ml Water
1 tbsp Lemon Juice

Instructions

Step 1: Place the cleaned blackcurrants and water into a large, heavy-bottomed saucepan.
Step 2: Simmer the berries over medium heat for about 10-15 minutes until the skins are soft and the fruit has burst.
Step 3: Add the sugar and lemon juice to the pan, stirring over low heat until the sugar is completely dissolved.
Step 4: Increase the heat to high and bring the mixture to a full rolling boil.
Step 5: Boil for 5-10 minutes, or until the jam reaches the setting point (105°C/221°F).
Step 6: Remove from heat, skim off any surface foam, and pour into sterilized glass jars. Seal immediately.

Notes

If the jam doesn’t set, you can re-boil it with a bit more lemon juice. Ensure your jars are hot when filling to prevent glass breakage.
