Ingredients
1 lb 80/20 ground beef
4 potato buns
4 slices American cheese
1 tablespoon unsalted butter
1 teaspoon Kosher salt
1/2 teaspoon black pepper
Optional: sliced onions, pickles, and burger sauce
Instructions
Step 1: Preheat your Blackstone griddle to medium-high heat, aiming for a surface temperature of 400-450°F.
Step 2: Divide the ground beef into 4 equal portions (about 4 oz each) and gently roll them into balls. Do not overwork the meat.
Step 3: Lightly butter the insides of the potato buns and place them on the griddle until golden brown and toasted. Set aside.
Step 4: Place the beef balls on the hot griddle, leaving plenty of space between them.
Step 5: Using a heavy burger press or a sturdy spatula, press each ball down firmly until it is about 1/4 inch thick.
Step 6: Season the patties immediately with salt and pepper. Cook for 2 minutes until a dark brown crust forms.
Step 7: Flip the patties carefully, ensuring you scrape up the entire crust. Immediately top each patty with a slice of American cheese.
Step 8: Cook for another 1-2 minutes until the cheese is melted and the burger is cooked through. Serve on the toasted buns.
Notes
Always use cold meat for the best smash. High heat is non-negotiable for the crust.
