blueberry crisp recipe - A golden-brown blueberry crisp in a white baking dish, with a scoop of melting vanilla ice cream on top.

Classic Homestyle Blueberry Crisp

This easy and delicious blueberry crisp recipe combines juicy, sweet-tart blueberries with a buttery, crispy oat topping. Perfect for any occasion, it’s a comforting dessert that tastes like summer in every bite, especially when served warm with a scoop of vanilla ice cream.

  • Total Time: 1 hour
  • Yield: 8 servings 1x

Ingredients

Scale

5 cups fresh or frozen blueberries (do not thaw if frozen)
1/2 cup granulated sugar (for filling)
2 tablespoons cornstarch or all-purpose flour (for filling)
1 tablespoon fresh lemon juice
1/4 teaspoon ground cinnamon (for filling)
1 cup old-fashioned rolled oats
1/2 cup all-purpose flour (for topping)
1/2 cup light brown sugar, packed
1/4 cup granulated sugar (for topping)
1/2 teaspoon ground cinnamon (for topping)
1/2 cup (1 stick) cold unsalted butter, cut into small cubes
Pinch of salt (optional, for topping)

Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch (or similar 2-quart) baking dish.
Step 2: In a large bowl, gently combine the blueberries, 1/2 cup granulated sugar, cornstarch (or flour), lemon juice, and 1/4 teaspoon cinnamon. Mix until the blueberries are evenly coated.
Step 3: Pour the blueberry mixture into the prepared baking dish, spreading it evenly.
Step 4: In a separate medium bowl, combine the rolled oats, 1/2 cup all-purpose flour, light brown sugar, 1/4 cup granulated sugar, 1/2 teaspoon cinnamon, and optional pinch of salt. Whisk them together.
Step 5: Add the cold, cubed butter to the dry topping ingredients. Use your fingertips, a pastry blender, or a fork to cut the butter into the mixture until it resembles coarse crumbs with some pea-sized pieces remaining.
Step 6: Sprinkle the oat topping evenly over the blueberry filling in the baking dish. Do not press down.
Step 7: Place the baking dish on a baking sheet (to catch any overflow) and bake for 40-50 minutes, or until the topping is golden brown and the blueberry filling is bubbly and thick. If the topping browns too quickly, loosely tent with foil.
Step 8: Remove from the oven and let the crisp cool on a wire rack for at least 15-20 minutes before serving. This allows the filling to set. Serve warm with vanilla ice cream or whipped cream.

Notes

For best results, use fresh, in-season blueberries. If using frozen, do not thaw them first. For an extra touch of flavor, add a pinch of freshly grated nutmeg to the topping mixture.
