Ingredients
1 box (15.25 oz) White or Yellow Cake Mix
3 large eggs
1/2 cup whole milk
1/2 cup unsalted butter, melted
1.5 cups fresh blueberries
1 tsp vanilla extract
1 tbsp all-purpose flour (for coating berries)
Instructions
Step 1: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease with non-stick spray.
Step 2: In a large bowl, whisk together the cake mix, eggs, milk, melted butter, and vanilla extract until just combined. Do not overmix.
Step 3: In a small bowl, toss the blueberries with 1 tablespoon of flour or dry cake mix to prevent them from sinking.
Step 4: Gently fold the coated blueberries into the batter using a spatula.
Step 5: Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Step 6: Bake for 18-22 minutes, or until the tops are golden brown and a toothpick comes out clean.
Step 7: Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a crunchier top, sprinkle coarse sparkling sugar over the batter before baking.
