Ingredients
2 cups fresh or frozen blueberries
3 tablespoons honey or maple syrup
1 tablespoon fresh lemon juice
1/2 cup water or coconut milk
Optional: 1/2 cup Greek yogurt for a creamy version
Instructions
Step 1: Place the blueberries, honey, lemon juice, and water (or coconut milk) into a high-speed blender.
Step 2: Blend on high for 45-60 seconds until the mixture is completely smooth or leave it slightly chunky if you prefer texture.
Step 3: Taste the mixture and add more honey if the berries are particularly tart. Remember that flavors dull slightly when frozen.
Step 4: Pour the mixture into your popsicle molds, leaving about a quarter-inch of space at the top for expansion.
Step 5: Insert the popsicle sticks into the molds and place them in the freezer.
Step 6: Freeze for at least 4-6 hours, or ideally overnight, until completely solid.
Step 7: To unmold, run the bottom of the molds under warm water for 10 seconds and gently pull the sticks.
Notes
If using Greek yogurt, swirl it in at the end for a marbled effect instead of blending it completely.
