Ingredients
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (10 ounce) can Rotel (diced tomatoes with green chilies), well-drained
1 (1 ounce) packet dry ranch seasoning mix
1 cup shredded sharp cheddar cheese
Instructions
Step 1: In a large mixing bowl, combine the softened cream cheese and sour cream. Beat with a hand mixer or stir vigorously with a sturdy spoon until smooth and well combined.
Step 2: Add the well-drained Rotel, dry ranch seasoning mix, and shredded cheddar cheese to the cream cheese mixture.
Step 3: Stir all ingredients together until everything is evenly distributed and well combined.
Step 4: Taste the dip and adjust seasonings if necessary. You can add a pinch of salt, garlic powder, or more ranch seasoning to your preference.
Step 5: Cover the bowl tightly with plastic wrap and refrigerate for at least 1-2 hours. This allows the flavors to meld and the dip to firm up.
Step 6: Before serving, give the boat dip a good stir. Garnish with fresh chopped chives or parsley, if desired. Serve chilled with your favorite chips or fresh vegetables.
Notes
For best results, make sure cream cheese is at room temperature for easy mixing. Drain the Rotel very well to prevent a watery dip. Chilling for at least an hour allows flavors to fully develop. This dip can be made a day in advance for even better flavor!
