Ingredients
1.5 lbs chicken thighs, boneless and skinless
1 wheel (5.2 oz) Boursin Garlic & Fine Herbs cheese
8 oz cremini mushrooms, sliced
2 cloves garlic, minced
1/2 cup chicken broth
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
Fresh parsley for garnish
Instructions
Step 1: Season the chicken thighs on both sides with salt and pepper.
Step 2: Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5-6 minutes per side until golden brown and cooked through.
Step 3: Remove the chicken from the skillet and set aside on a plate.
Step 4: In the same skillet, add the sliced mushrooms and cook until they have released their moisture and turned golden, about 5 minutes.
Step 5: Add the minced garlic to the mushrooms and sauté for 1 minute until fragrant.
Step 6: Pour in the chicken broth and bring to a light simmer, scraping up any browned bits from the bottom of the pan.
Step 7: Crumble the Boursin cheese into the skillet and whisk until melted and a smooth sauce forms.
Step 8: Return the chicken to the pan, spooning the sauce over the top, and simmer for another 2 minutes to heat through.
Step 9: Garnish with fresh parsley and serve immediately.
Notes
Ensure the chicken reaches an internal temperature of 165°F. You can substitute chicken breasts, but reduce cooking time to prevent drying out.
